Ingredients

- 1 teaspoon red chili powder (adjust to taste)

- 1 teaspoon garam masala

- Salt to taste

- 1 tablespoon kasuri methi (dried fenugreek leaves, optional)

- Green chilies (slit, optional, for extra heat)


Instructions


1. **Prepare Kadhai Masala:**

   - Dry roast coriander seeds, cumin seeds, black peppercorns, and dried red chilies in a pan on low heat until fragrant (about 2-3 minutes).

   - Let it cool and then grind into a coarse powder. Set aside.


2. **Sauté Vegetables:**

   - Heat oil or ghee in a kadhai or deep pan over medium heat.

   - Add chopped onions and sauté until they turn golden brown.

   - Add ginger-garlic paste and green chilies, sautéing for another minute until the raw smell disappears.
